I LOVE soup all year round, but especially when it’s cold, rainy and/or snowy!!  We sure have had a lot of that kind of weather lately, and it always makes me crave comfort food!!  I thoroughly enjoy cooking, and especially enjoy complicated recipes, but sometimes I just don’t have the time to spend hours in the kitchen!!

When I am craving delicious, homemade chicken soup, I often find myself turning to this recipe since it’s quick and easy!!   It tastes just like the real thing, and my family has been known to tell me that it tastes even BETTER than Olive Garden’s!!   Give it a try and let me know what you think!!

Copycat Olive Garden Chicken Gnocci Soup

  1. 1/2 stick butter
  2. 1 T. extra virgin Olive oil
  3. 1 c. onion, diced
  4. 1/2 c. celery, diced
  5. 3 cloves garlic, chopped
  6. 1/4 c. flour
  7. 1 pint half and half
  8. 2 14-oz cans of chicken broth
  9. salt
  10. pepper
  11. 1/2 tsp thyme
  12. 1/2 tsp parsley, chopped
  13. 1 c. shredded carrots
  14. 1 c. chopped spinach
  15. 1 c. cooked, diced chicken breast
  16. 1 16 oz package gnocci
  1. Melt the butter in to the oil in a large saucepan over medium heat. Add the onion, celery and garlic and cook until transparent. Whisk in the flour and cook for about a minute. Whisk in the half and half and simmer until thickened. Add the chicken broth and simmer until thick. Stir in salt, pepper, thyme, parsley, carrots, spinach, chicken and gnocci and cook an additional 20 or so minutes until heated through. Enjoy!!
  1. This soup gets thicker as it sits, and is fabulous the following day. It does not freeze well though because of the half and half.
