This recipe is compliments of my niece Katie ~  It’s almost as awesome as she is (but not quite)!!

The flavors compliment each other nicely, and it’s a great way to sneak some spinach in to everyone’s diet! 

Give it a try.  It’s super quick and easy to make and oh so delicious!! 

Creamy Tomato and Spinach Pasta with Chicken

Ingredients
  1. 1 Tbsp olive oil
  2. 1 small onion
  3. 2 cloves garlic
  4. 1 (15 oz.) can diced
  5. ½ tsp dried oregano
  6. ½ tsp dried basil
  7. pinch red pepper flakes (optional)
  8. freshly cracked pepper to taste
  9. ½ tsp salt
  10. 2 Tbsp tomato paste
  11. 2 oz. cream cheese
  12. ¼ cup grated Parmesan
  13. ½ lb. penne pasta
  14. ½ (9 oz.) bag fresh spinach
  15. 1 lb. boneless chicken breasts (lightly coat with flour and Italian seasonings, then brown on each side in olive oil for apx 8-10 mins). Set Aside.
Instructions
  1. 1. Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10) minutes. Drain the pasta in a colander.
  2. 2. Dice the onion and mince the garlic then saute both in a large skillet with olive oil over low/medium heat until soft and transparent (5 mins).
  3. 3. Add the diced tomatoes (with the juices), oregano, basil, red pepper and a sprinkle of salt and freshly cracked pepper to the skillet with the onions and garlic. Stir to combine. Add the tomato paste and a ½ cup of water to the skillet mixture and stir until the tomato paste is dissolved into the sauce.
  4. 4. Turn down the heat to low.
  5. 5. Cut the cream cheese into pieces and then add them to the skillet with the tomato sauce. Use a whisk to stir it until the cream cheese has fully melted in and the sauce is creamy. Add half of the Parmesan to the skillet and whisk it until it melts in. Add the remainder of the parmesan and whisk until melted in again.
  6. 5. Add the fresh spinach and gently stir it into the sauce until it has wilted (about 3-5 mins).
  7. 6. Add prepared chicken.
  8. 7. Add the cooked pasta and stir until it is well coated in the creamy tomato sauce.
  9. 8. Enjoy!!
