I am pretty sure “Gob Cake” is a regional recipe!! I grew up in Western Pennsylvania, and I can remember my friend Tracey making this when I was in 11th grade!! I STILL make it 29 years later!! If you like chocolate cake, I KNOW you will love it!!
Ingredients:
1 box chocolate cake mix
1 small box of instant chocolate pudding
1/4 c. oil
4 eggs
1-1/2 c. milk
Mix all ingredients until smooth. Divide and bake in two equal sized pans at 350 degrees for 20 minutes. Cool and frost the top of one cake. Place the second cake on top of the first so the icing is in the middle. Enjoy!!
Icing:
1 c milk
5 T. Flour
Cook until thick…cool.
Add:
1 c. shortening
1 tsp. vanilla
pinch of salt
1 to 2 c. powdered sugar to desired sweetness. (I start with one cup and add a bit at a time as needed). Scrape the sides of the bowl as its mixing!
