JUST ALMONDS REVIEW AND GIVEAWAY ~ Ends 7/12/12

I’ve always been a little nutty, and I honestly don’t remember EVER encountering a nut I didn’t like.  I was SUPER EXCITED when Just Almonds sent me a package for a review.  I couldn’t wait to tear into the bag, and once I did I was not disappointed.  In fact, I was far from disappointed.  These were the BEST tasting, freshest nuts I have ever had!!

I decided to make cinnamon sugar almonds, and they could not have turned out better!!  They reminded me of the super yummy nuts  my family and I used to get when we traveled to Atlanta, Georgia for Cheersport Nationals every February!!

I used this very simple recipe!!

 

  • Preheat oven to 300 degrees.  Line a baking sheet with foil and lightly spray with vegetable oil.3 1/4 cups whole almonds
  • 1 1/2 cups sugar
  • 3 tablespoons cinnamon
  • 1 egg white
  • 1 1/2 teaspoons vanilla
  • 1/8 teaspoon salt
In a large bowl combine sugar and cinnamon.  In another large bowl beat egg white until slightly frothy. Stir in vanilla and salt.
Add almonds to egg mixture and toss to coat then pour almonds into cinnamon sugar mixture and toss to coat.
Spread  on lined baking sheet and bake for 25 minutes, stirring after 10 minutes.  Cool and Enjoy!!

I was also sent a bag of Almond Flour to try!!  I have never tried almond flour before, and I love to bake, so I was eager to use this.  I decided to make Snickerdoodles, a family favorite!!  I wasn’t sure how they would turn out using almond flour, but I can assure you they tasted as good as they look in this picture!!  They turned out so moist and just melted in our mouths!! It must be the cinnamon/almond combination that my family enjoys so much!!
Almond flour is very nutritious and easy to use . It’s also a great alternative for those who need to watch their glycemic index. Almond flour is GLUTEN FREE, high in protein, low in carbohydrates and low in sugars.  Almond flour is good in “quick-bread” type recipes, like muffins, nut breads, and pancakes.  It’s not good for foods such as bread that require a real dough (you can’t knead it). Usually, more eggs are required when baking with almond meal to provide more structure.
